Keto!
I've gone Keto! And this is one of my favorite breakfasts: Kale, Chorizo, and Manchego Egg Bites.
I set my Anova for 172 degrees.
I brown the chorizo in a skillet. Then I add a bag of kale, chard, and spinach, coarsely chopped, and cook until the greens are wilted. Then I put 5 eggs in a blender with 1/4 cup cream cheese, 1/4 cup grated manchego, and salt and pepper to taste. I blend that up and put it in the little jars with the greens and sausage mixture. Then I put the lids on, finger tight, and put the jars in the water bath for 1 hour.
When I take them out to cool, it's fun to hear the lids pop. Once cooled, I put them in the fridge. One minute or so in the microwave and a delicious breakfast is ready to eat!
