Resolutions
It's a new year and one of my resolutions is to start posting again, so here goes.
I made some black-eyed pea hummus to take to a New Year's Eve party and everyone really liked it. I pretty much followed a recipe that I found at "Shockingly Delicious."
First I soaked dried black-eyed peas overnight. Then I drained them, added fresh water and salt and a little lard (homemade by my friend Shelly) and cooked the peas until they were tender.
I minced a shallot and some garlic and sautéed it in olive oil until it was tender. I added some drained peas, I didn't measure, I just put in enough to make the amount of hummus I wanted. I would estimate that I ended with about 2 cups. I added the cooked shallot and garlic, some fresh minced garlic, tahini, 1/2 teaspoon of toasted cumin, 1 teaspoon of ground coriander, salt, and lemon juice and lemon zest. Then I pulsed it until it was a smooth consistency for dipping.
