Saturday Brunch

Another summer, another brunch season. Today we had something new: Baked Eggs with Bacon and Spinach. Here is a picture of the leftovers.


On the right are the scones that I made for the slumber party for William and Kate's wedding. (Leigh came up with the marvelous idea to have a shower for their baby! more about that later.) On the left, the baked eggs with bacon and spinach. Here is the recipe:

Applewood smoked bacon (amount to be determined by how much you want to make. I used 1 1/2 pounds)
baby spinach (I used a pound of fresh, could have used more)
English muffins (I HIGHLY suggest you use Thomas English muffins, I used six cut in half)
eggs (I used a dozen)
heavy whipping cream

Preheat oven to 400 degrees. Cook bacon in large skillet, transfer to paper towels. Pour off drippings from skillet, leaving approximately 2 T in skillet. Put some of bacon fat in 9x13 baking dish. Add spinach to skillet, sprinkle with pepper and salt. Toss over medium heat until wilted. Season with salt and pepper. Toast English muffin halves and put in baking dish. Spread spinach over muffins. Break up bacon and strew over spinach. Make a depression in spinach and bacon over each muffin. Break an egg in each depression taking care not to break yolk. Add salt and pepper over eggs and sprinkle with heavy cream, approximately 1 teaspoon per egg. Bake until whites are set but yolks still runny, approximately 14 to 16 minutes.

I WILL make this again. I'm thinking about adding Hollandaise or a balsamic reduction, maybe some cheese.... We'll see and I will post how it turns out.

I also served cheese grits. Delta Grind with chipotle white cheddar cheese. I brought 4 cups of liquid to the boil, 3 cups of water, 1 cup of a mixture of heavy cream and milk. Once that came to a boil, I added 1 cup Delta Grind grits and covered the pot. I let it simmer for about 30 minutes, stirring occasionally. Then I added salt, pepper and 2 cups of grated chipotle white cheddar cheese. Yum.

  1. I actually think I like the Cheese Grits best of all, this will be on my breakfast table soon :) Perhaps even the dinner table as well :) love me some grits.
