Deviled Quail Eggs

I went by our local meat market to get some steaks to grill. They had quail eggs in the display case. They are the cutest little things! I just had to buy some.


I decided to boil them and make deviled eggs. I put them in a pot and covered them with water. I brought them to a good rolling boil, then took them off the heat, put a lid on the pot and let them sit for five minutes. They were perfect.


I found that they were easier to peel if I cut them in half first. I mixed the yolks with some mayonnaise, Dijon mustard, white wine vinegar, and malt vinegar. I put the mixture in a pastry bag and piped them into the whites. I then sprinkled them with Maldon sea salt, cayenne, and chives.


They were pretty tasty. Even though it was a bit of bother to work with so many tiny eggs, I think I will make this again.
