Roasted Grape and Goat Cheese Crostini
In June, we went to Seattle, Portland, and the Willamette Valley. While in Seattle, we went to one of our favorite wine bars, Purple. We had wonderful roasted grape crostini there. I tried to recreate it at home.
First I grilled sliced French bread. Then I tossed grapes in olive oil and roasted them at 400 degrees until they looked like the grapes on the crostini at Purple. I mixed the goat cheese with a little fresh thyme, and tossed some arugula with the drippings from the pan I roasted the grapes in. It was pretty tasty!
