Fried Meatloaf
Fine Cooking emails me a recipe every day. One of the recipes this week was Fried Meatloaf. I had to try it. I used the Buon Cibo recipe from an earlier post for the meatloaf. Here is the recipe for frying it up:
1/2 cup all purpose flour
1 large egg, beaten
1 cup Panko bread crumbs
Kosher salt and freshly ground black pepper
1/2 to 3/4 inch slices of cold meatloaf
oil for frying
Lightly flour the meatloaf slices. Dip in the egg, coating completely, then dredge in the Panko bread crumbs. Refrigerate for at least 5 minutes and up to 30 minutes to allow the breading to set up.
Add the oil to a large skillet with straight sides. Heat over medium high heat until a bread crumb immediately and vigorously bubbles when put in the oil. Carefully put the breaded slices in the oil. Cook 1 or 2 minutes per side, until nicely browned. Serve hot.
