Easy Cupcakes
If you have to make cupcakes for a Valentine's party, here is a really easy recipe. You don't even have to frost them!
Cheese-filled Chocolate Cupcakes
1 pkg. chocolate cake mix (I like to use Devil's Food)
1 8 oz. pkg. cream cheese
1/3 cup sugar
1 egg
6 oz. semi sweet chocolate chips
Prepare cake mix according to package directions. Cream cheese and sugar, add egg. Blend well and stir in chocolate chips. Fill muffin cups 2/3 full and place one well-rounded teaspoon of cream cheese mixture on top. Bake at 350 for about 25 minutes.
The cupcake will cook up and over the cheese mixture so that in the end, the cheese mixture is in the middle of the cupcake.
