Buon Cibo

Literally translated from the Italian buon cibo means "good food." It is also a restaurant in Hernando that serves good food, mostly soups, sandwiches, pizzas and delectable desserts. On Friday and Saturday night, however, the chef, Josh Belenchia, kicks it up a notch and serves a more "fine dining" style menu. We went last night and I had the crab cakes with mango and avocado salsa. The crab cakes were crispy on the outside with mostly crab on the inside, just like they should be.


My husband had a double chocolate whoopie pie for dessert. I took a bite and it was pure chocolate heaven.

They also have a really good meatloaf.

1 onion cut into small dice
1 carrot cut into small dice
2 stalks of celery cut into small dice
1 clove of garlic, minced
2 lbs. ground meat
1/4 cup Dijon mustard
1/4 cup brown sugar
1/2 cup sweet chili sauce (the recipe says found at your local Asian market, but this is small town in Mississippi so I just use ketchup)
2 eggs
2 t salt
1 t pepper

Saute the onions, carrot, celery, and garlic together until translucent. You want them done, but you want them to still have a little bite to them. Once they reach that point take them off the heat and let cool. Mix all the ingredients together except for the sweet chili sauce (or ketchup). Form into a loaf on an oven safe dish. Drizzle the sweet sauce/ketchup over the meatloaf and bake at 350 degrees for 50 minutes or until the internal temperature reaches 150 degrees.

I know that there are no bread crumbs, crackers, etc., in this recipe. I asked Josh if it was a typo and he said, no, that he just didn't get adding that to meatloaf. Now I don't get it either.
