Two Thanksgiving Side Dishes Featuring Cranberries

With Thanksgiving next week I thought I would post two recipes that have cranberries in them. The first seems like a dessert, but it goes well with turkey and dressing too.

Cranberry Apple Casserole

3 cups peeled, chopped apples
2 cups fresh cranberries
2 T all purpose flour
1 cup sugar
3 pkg. instant cinnamon and spice oatmeal
3/4 cup chopped pecans
1/2 cup all purpose flour
1/2 cup firmly packed brown sugar
1/2 cup butter, melted
pecan halves
fresh cranberries

Combine apples, 2 cups cranberries, and 2 T flour, tossing to coat fruit; add 1 cup sugar, mixing well. Place in a 2 quart casserole.

Combine oatmeal, chopped pecans, 1/2 cup flour, and brown sugar, add butter and stir well. Spoon over fruit mixture. Bake, uncovered, at 350 degrees for 45 minutes. Garnish with pecan halves and fresh cranberries.

Cranberry Relish (warning: this makes A LOT)

1 pound fresh cranberries
1 large can crushed pineapple
2 cups sugar
2 pkg. strawberry jello
1 cup chopped nuts
4 apples, chopped
12 oz. orange juice concentrate

Chop cranberries in food processor, blend well with remaining ingredients and chill.

I am making the relish this year and have already lined up friends to share it with.
