So, I have decided to start a blog. I don't really know specifically what it is going to be about, I guess I will make it up as I go along. A little bit about me, I live in a small town in Mississippi. I like to cook, drink wine and travel. I guess I will blog about that. Last night we had an open air concert on the square. One of the things that I made to munch on while we listened to Blue Mother Tupelo was Pecan Pie Muffins. Hope you like them as much as my friends and I did:
1 cup light brown sugar
1/2 cup all-purpose flour
2 eggs
2/3 cup melted butter
1 cup chopped pecans
pecan halves
Preheat oven to 350 degrees. Mix all ingredients in a bowl. Spoon into a greased mini muffin pan, filling each cup 2/3 full. Top with a pecan half. Bake for 12 to 15 minutes.
